Always use the hand guard, every single time. Mandoline injuries almost always happen on the last few slices, when the vegetable gets small and people stop using it. Throw the end away instead — it is not worth a fingertip.

Keep it away from children. Wash it carefully rather than putting it in a sink full of water where the blade is hidden.
